POTASSIUM SORBATE SOLUTION 50% w/v (E202) is a clear solution made from food grade potassium sorbate and water.
Potassium sorbate is also known under the E-number E202 which is the potassium salt of sorbic acid. The primary use for this product is as a food preservative and is effective in a variety of applications including food, and wine. Potassium sorbate is used to inhibit moulds and yeast growth to increase shelf life.
Also known as a “wine stabiliser”, potassium sorbate produces sorbic acid when added to wine. This, in conjunction with metabisulphite, will inhibit the further growth of yeast.

12% 0.135 g/l

Potassium sorbate addition is dependant upon several criteria including: Wine pH; Concentration of SO2; Percentage alcohol by volume; concentration of sorbate and viable yeast cell count.
Assuming the proper levels of SO2 are maintained and the pH is within the desired ranges, sorbate additions can be determined by the estimated alcohol of the wine
